Turkey & Sweet Potato Meatloaf with Shallots, Pancetta, & Smoked Paprika

1 lb. ground turkey
roughly 2-3 ounces pancetta, finely chopped
roughly 2/3 cup finely chopped shallots (roughly 3-4 big shallots)
1 small cooked & peeled sweet potato (you can do this in the microwave)
1 T Worcestershire Sauce
1.5 t Smoked Paprika
1 egg

Cook the pancetta in a bit of oil until crispy, drain & reserve. Cook the shallots in the same pan until soft & caramelized (you may need to add a bit more oil). Mix all of the ingredients in a medium bowl very well. I used a muffin pan with silicone liners to make mini-meatloaves, since they cook more evenly & more quickly this way. Divide the "batter" into the muffin tins, cover the pan with foil, & bake at 325 until firm (roughly 20 min).
